Taken over by Flora Diallo, a passionate cook, Le Mandajors is the oldest restaurant in Alès. Since 1929, this gem, steeped in history and conviviality, has continued to delight diners with its original, locavore cuisine and a menu that evolves with the seasons. Its current chef, Dimitri Gallego, showcases his savoir-faire and brings you signature dishes such as cep ravioli and Cévennes fricassee.
