Frédéric Béguin turned it into a must-visit restaurant for 30 years, and Flora, the new owner, has changed absolutely nothing. The à la carte menu, the characterful menu (read on), the ambience: everything exudes the South, the Gard, the Cévennes, and it's a real treat. You'd think you were being welcomed into the home of a local family, and while the place claims to be slow food, you won't be kept waiting. We go there for the Cevennes fricassee, the home-made brandade au gratin and a choice of local meats. A real treat.

Taken over by Flora Diallo, a passionate cook, Le Mandajors is the oldest restaurant in Alès. Since 1929, this gem, steeped in history and conviviality, has continued to delight diners with its original, locavore cuisine and a menu that evolves with the seasons. Its current chef, Dimitri Gallego, showcases his savoir-faire and brings you signature dishes such as cep ravioli and Cévennes fricassee. To guarantee you an authentic, tasty culinary experience while ensuring the quality of your dishes, the team carefully selects ingredients, giving priority to fresh local produce. This approach is designed to bolster the local economy, but above all to present you with delicious dishes such as the famous chestnut cake. For starters, try the asparagus velouté with cured ham chips or the morel mushroom and soft-boiled egg crust. For main courses, try lamb mouse confit with honey and rosemary, or stuffed squid. For dessert, enjoy strawberry pavlova. To accompany your meal, discover the magnificent selection of organic and local wines, conveying the richness and diversity of regional vineyards. There's also a wide choice of local beers. Here, you'll dine in a cosy, welcoming setting, with the ambience and décor of a traditional bistro. In summer, you can relax on the lovely outdoor terrace. Je conseille les ravioles aux cèpes ou les tellines, l oeuf cocotte et l omelette meme si le faux filet de mon mari était très bon avec sa sauce aux cèpes.
Les plats sont copieux, l'ambiance conviviale sans être dans un brouaha comme dans certains resto. Nous reviendrons avec plaisir.
