Guilhem Accabat, in his thirties, has taken over the land his family has been farming for 3 generations in Arpaillargues-et-Aureillac. He farms 1,470 olive trees in organic farming, from the bouteillan, picholine and negrette varieties. The result is a very subtle PDO Nîmes oil, which he sells to the estate, as well as an oil flavoured with basil. A visit to this magnificent 10-hectare property where a few fallow deer frolic is a must!
