After obtaining a post-graduate degree in pharmaceutical development project management, Gilles Granier worked for a year in a large pharmaceutical group. But "when you're born into it, the need to be in the field quickly catches up with you," smiles this son of a farmer. So in 2003, Gilles Granier decided to leave the white coat for a pair of overalls. But not in any way: "My father carried his olives to the cooperative. All his work was not valued". He immediately invested in a mill in order to control his entire production. He also takes advantage of his years of study and research on the organoleptic and nutritional qualities of olive oil: "the quality of the oil depends on the work done on the olive trees. As much as to say that he pampers his 5,000 trees, located on the plateau of Signargues. Almost half of them are two hundred years old, the others are between 15 and 50 years old. No irrigation to concentrate the aromas, but also a conscientious picking, by hand, at optimal maturity and in boxes of 15 kg maximum to limit the processes of fermentation and oxidation. "The oil is extracted immediately after the harvest. As for the crus, they are bottled directly, at the request of customers, in UV-resistant bottles. A method that bears fruit: Gilles Granier received the prize of excellence at the Concours Général Agricole de Paris in 2009, 2010, 2011, 2016, 2017 and 2018.
