ECOLE DE SOMMELLERIE
The professional Lycée Voltaire has a sommelier section with a complementary mention (level V diploma), which is prepared in one year in addition to another diploma in the hotel-catering sector (CAP, BEP…). Diploma also accessible after three years of experience in the profession. Professional tasting uses personal skills: smell wine, absorb a sip, hold it in mouth before recracher, guess the aromas, recognize the grape varieties, discern the vintage, learn the specific vocabulary used to describe his dress, describe the wine and the final knowledge to associate with the best wines and dishes. The learning also covers the history of vineyards, the supply, storage, maintenance of wines and spirits, from the material from the cellar to the distribution and to the table service at the right temperature. Sommelier school is interested in wines and any commercialized beverage from mineral water to strong alcohol.
