COUDÈNE
Located in the heart of the Cévennes National Natural Park in Saint-Christol-lès-Alès, the Coudène company has maintained a culinary expertise linked to the region for more than eighty years. His recipe for cod brandade - inherited from a beautiful family history that began on the quay of Gardon in Alès where René Coudène sold the dish in a bucket - has been the same since 1936. Over the years, production has become industrialized, but Coudène makes it a point of honour to respect the traditions and original composition of this southern specialty, "with cod and nothing but cod", Michel Coudène likes to repeat. The company also offers other products - parmentiers, spreads, tielles, fish soups and savoury pies - produced in its workshops and with the same requirements.
