Here, in Saint-Jean-de-Serres, you will find yourself on the hills of the Piedmont Cévennes. The clay-limestone soils are suitable for different grape varieties: viognier, chardonnay, cinsault, syrah, merlot or grenache... All are grown here and are present in the IGP Cévennes wines of the Domaine de la Vaillère, which has belonged to the same family for a century. Gradually, the winegrowers of the estate eliminated phytosanitary inputs and pesticides from their viticulture. In 2019, an attempt was even made to produce a white wine without sulphites: a result to be tasted very soon!
