Amateurs of rosé, you will be served, as indicated in the light panel on the edge of the motorway, on the roof of the cooperative cellar: " Tavel, first rosé of France ". It is since the th century that we drink the tavel. A favourite drink of Philippe the Bel, and then recaptured by the Popes of Avignon, tavel remains the only controlled appellation of France that produces only rosé. This famous wine is obtained through a vinification which includes a short maceration of the fallen grapes, without beginning fermentation in order to extract the fruit and the specific characters of the ripe grape of each vine: Grenache, syrah, cinsaut, mourvèdre, clairette and bourboulenc. Fresh with a salad, in the shadow of a hackberry, what can you dream of better?
