Here is an interesting character with many hats! Craftsman, merchant, breeder of fine Languedoc wines, and producer of PGI Cévennes wines, Samuel Delafont produces micro-vats worked in a traditional way and with great respect for the terroirs... For each vintage, the House selects, blends and matures small volumes of freshly fermented wine from the best châteaux and estates in the appellation. With great care in the search for the balance of the wine, between finesse and extraction, generosity and freshness. Samuel created this house with an activist approach and the desire to participate in the development of the great wines of Languedoc. This profession allows him a great freedom of choice and creation to produce handmade wines. The wines are aged in oak barrels and stainless steel barrels, invented by the owner of the estate. The first prize of Alès Audace, a competition that rewards project leaders, was awarded to him in 2016. It was necessary to dare and it is a success, the stainless steel barrels allow to stay on the fruit of the wine and to give it freshness. We can then understand why only fine Languedoc wines are produced.
