In addition to an exceptional view of the Gorges, this restaurant offers quality cuisine, based on products sourced nearby and prepared by a magician who knows how to do just about everything. There's no menu, just a daily or almost daily early-morning slate of new arrivals. Meats from Aubrac or the Causse are served grilled; trout from Le Rozier is available whole, filleted or rilletted. Side dishes and desserts (strawberry or apricot tarts, old-fashioned panna cotta, etc.) vary according to the chef's whims and the season.
