LOU LOZÈRE
Do Yen could have chosen Normandy or Brittany, territories traditionally identified as butter manufacturers, but the company preferred Lozère, its mountainous terrain and its exceptional quality milk. For a little over two years since it was set up in Mende, this small company, a top-of-the-range butter factory, has already served the tables of great chefs, as well as the stalls of many delicatessens around the world. Do Yen offers artisanal clods, made from the milk of cows from the Massif Central, handcrafted in wooden moulds and carefully wrapped in a pretty paper. Sold under the Lou Lozère brand, this luxury butter is available in several sizes: sweet, semi-salty but also flavoured (garlic and herbs, shallot and tarragon, truffles, beer malt, onion and ginger, lemon and green pepper, three seaweed...). Enough to imagine tasty and authentic recipes
