Taking up a traditional Lozère recipe, Eric Kermès became a master craftsman in 2012. He is a manufacturer of croquants (traditional and with chestnut flour), the real specialty of the city of Mende and whose reputation is no longer to be made. The almonds come from the almond trees of the Tarn gorges and the chestnut flour from the Cevennes mills. These golden cookies can be kept for a long time and are very popular especially for breakfast and snacks.
