LACTALIS
The Massegros dairy plant, which employs more than 300 people, is the second largest industrial site in the department and the largest sheep's milk dairy in the world. Created by the Société des caves in the early 1980s, it was first intended to promote the surplus milk from the Roquefort sector. The company, whose credo is rather upscale, is now focusing on the production of Salakis, a "feta" made in Lozère, which combines the milks of Aveyron, Lozère, Hérault, Gard, Tarn and Aude. This cheese is sold plain, in oil or flavoured in France, but especially abroad (80% of production is exported). Since 2015, the Massegros site has also housed the manufacturing workshops of Lou Pérac, a peril made from Lacaune sheep's milk, like Roquefort.
