HÔTEL - RESTAURANT BALME
Restaurant promoting local produce and offering a children's menu in Villefort.
It's now a women's restaurant: Michel Gomy has handed over to Carole Verdeau. No revolution, on the contrary, a smooth transition that asserts the new chef's personality, with here and there a tribute dish to her predecessor (warm pan-fried foie gras with poppy seeds). It's still quality cuisine that's on offer: local produce is showcased with chicken from the nearby Ardèche, but also, and above all, Villefort trout, in rillettes for a revisited hamburger, or in a saffron-grape tartare. And don't forget the cochon de Lozère, served medium-rare, or the other famous local specialty, chestnuts, highlighted by the cannelé cévenol with chestnut liqueur. The children's menu is also well worth the detour: it's a real gastronomic menu (spring salads, poultry supreme with chestnut cream, chef's surprise), not a marketing gimmick, which proves the respect we have here for the cuisine and the customer. An address not to be missed.

Stayed 2 nights in April 2023, and was extremely pleased. The hosts are helpful and super friendly. The rooms are spacious, very tall ceilings, quiet and clean. Each room is unique; the furniture and decor hark back to byegone days, and there are two ways to consider this - if you are curious and open minded it is very funky and cool, but if you have a 'best western' mindset you might find it old and stuffy. Myself I found it charming, the antithesis of bland modern accomodation. But best of all is the restaurant, the food was absolutely delicious, interesting local dishes, great wines, excellent value for money. Definitely the best eating place for miles around. The hosts obviously work hard (with a limited budget) to keep the place as comfortable as possible, and really that's what you want when you visit these out-of-the-way places up in the hills. Very reasonable rates. Definitely worth the detour.

Dîner très très savoureux, préparé avec des produits frais.
Les chambres sont dans le jus de l époque, trop géniale, on a l impression d être de retour chez pépé et mémé. Génial.
On reviendra et je recommande sans hésitation.
