Restaurant offering an inventive cuisine based on local products.
Things are moving in Banyuls. Not on the seafront, but in a charming pedestrian street off the beaten track. Aurélien, a chef by trade, is a real magician in the kitchen. It's very good and very fine but what seduced us was the mix of cuisines and flavours: a declaration of love to France and Spain. The menu changes regularly and the name of each dish is like an alexandrine. The cuisine is offbeat and daring, based on local products and fine craftsmanship. The Quintessence claims to be an inventive cuisine, and we would add passionate!
