Guillaume Aubailly, Toque blanche du Roussillon, is not bothered by fashion. Don't expect a trendy, contemporary or lounge décor, nor designer crockery; this is not the spirit of the house. Your innkeeper Guillaume cooks very traditional dishes to perfection for a faithful clientele. His cooking is like him, simple, without an ounce of pretension but devilishly greedy and generous. He also specifies that he uses Catalan products, but without necessarily making Catalan cuisine. Classic value but sure value.
