Sophie and Rinie raise a flock of 250 ewes on the mountain pastures at the bottom of the Tech valley. Their work is totally natural and according to strict rules: the animals eat grass, grass and more grass. Milking takes place from March to September. During the tasting, you can choose between tomme, soft cheese, mato, brousse, fromage blanc and yoghurt. If the winding roads of Vallespir make you dizzy, you can meet Sophie at the markets in Plats-de-Mollo (Friday) and Céret (Saturday).
