Brigitte and Jean Pierre have been producers and harvesters of almonds since 2003. The almond groves are located at the foot of the Forteresse de Salses-le-Château, and it is in their "factory" (called processing plants) that their production is broken and marketed. You may have the opportunity to wacth the breakage of the shells by this machine that some will find outdated but works very well. The shells recovered in that way are dedicated to the heating and the almonds will be grilled, salted, flavored with garlic, pepper, ginger and many other things, then will be sold in sachets, jars or in the form of almond paste. A 100% Catalan product you won't fail to enjoy at the end of the 2 hours of visit.
