There is no shortage of olive trees and olive producers in the Catalan Country. But Le Futé has found you a little nugget (green or black) in the presence of Thomas, a young man who farms 7 hectares of olive trees on Argelès whose trees have the particularity of being between 100 and 250 years old. The harvest is done at the beginning of maturity to obtain a very fruity oil "with tomato foot aromas". The oil extracted from the king fruit of the Mediterranean is decanted and not filtered in order to preserve all its properties. No treatment, fertilizer or watering: "the trees only produce what they want to produce, which allows for a concentration of aromas", Thomas continues. To complete his activity, he also produces almonds, it sounds banal, but taste his toasted almonds with Camargue fleur de sel! And an old vine of macabeu is intended for a traditional vinegar aged in barrels. Everything is to be discovered and savoured absolutely, because we find the too rare taste of the authentic.
