Located a few kilometres from the spa town of Evaux-les-Bains, the Checkerboard is one of the friends of the White Toque of Limousin, an association of chefs of the region who are interested in highlighting local products. Here, amongst other dishes, there is a verrine of Pommes apples from Limousin, the ceps beef filet, the goat cheese of the neighbouring farm in Valletta (hot, walnut panna or the cheese platter), the dishes raised by saffron grown in Fontanières. The chef, Frédéric Dessauves, is committed to a careful cuisine with local products. The cuisine varies according to the seasons, the framework is intimate and the formulas are suitable for all budgets.
