Where did the limo madeleine come from? Legend has it that a young girl named Madeleine gave pilgrims an egg cake made from a scallop shell, from which she takes her particular shape. The two most famous factories are in Saint-Yrieix (Bijou and Boule d'Or). You can buy madeleines there at very reasonable prices, in very practical individual packages for picnics and snacks. Bijou also makes cakes, fondants, moelleux, biscuits... But also think of the madeleines made by the local craftsmen (bakery, pastry shop, restaurant, tea room), whose know-how has nothing to envy the greats. For a Proustian souvenir in the Limousin region: from softness to perfume, each house has its own little recipe that makes a difference to the palate, such as the Délicieuse, which bears its name very well, or those well known for their chocolate shells.
