Patrick Clemann and his wife resumed the family business in 1991. In partnership with the tourist office, Clemann Pâtisserie created the Vauban on the occasion of the year Vauban, celebrated in 2007. The Vauban is a cake, composed of a apricot moss, a blueberry cream and a hazelnut biscuit. The Chocolat of Lorraine, whose shape evokes ore, has become the speciality of the country of Longwy. A delicious bite made of praline, milk chocolate, hazelnuts and almonds, coated with cocoa. More recently and exclusively presented to the tourist office, the meringue of the headquarters well is intended to be fine and fragrant to the hazelnut. Sweets also sold 21, rue de Paris, in Herserange, in their second pastry.
