O'Bistrot Baignot offers a masterful, attentive cuisine, with local products and a few inspirations from elsewhere.
Grégory Boyer, former second-in-command at the Moulin de Poustagnacq and chef at Le Cosy in Saint-Paul-lès-Dax, has bought the former Pinocchio pizzeria with his wife Virginie, transforming it into a bistronomic restaurant. While the chef changes his menu once a month, or even more often, he renews it every day for lunch. Nourished by local produce and a few inspirations from elsewhere, Grégory also invites us to discover even more elaborate dishes on the à la carte menu. His cuisine is masterful, generous and attentive.
