Restaurant of the Hotel Industry Training Center serving menus with traditional French cuisine
Welcome to the Meurthe-et-Moselle Hotel Industry Training Center restaurant. In this atypical setting, customers are offered dishes prepared by young people (and adults) in training. As the school prepares its students over a two-year period, the difficulty of the techniques required increases with time. As a result, menus prepared at the beginning of the school year will be less mastered than those prepared at the end of the year. This is just as interesting, in order to better assess the margin for progress. On Thursday evenings, it's the students preparing a vocational diploma who officiate. The menus are plentiful, featuring traditional French cuisine. The restaurant is often fully booked. Here are a few examples of the dishes served. Starters include ham turnover, cheese soufflé, mushroom puff pastry and this plate with two Lorraine sausages. Main courses include pan-fried rack of veal bruxelloise, old-fashioned veal blanquette with creole rice, roast guinea fowl or skate wing with capers... Desserts (of the day or by the pastry chef) are just as delicious. Service is provided by the students, who are also learning about the difficulties of their job. Little by little, the clumsiness of the early days is transformed into confidence. And the smiles are increasingly relaxed... The center operates on reservation only, so please plan ahead to avoid finding a closed door.
