La Quintessence is first and foremost the chef Cédric Bertaux. Coming from a farming background, he developed a real love for the land from his grandmothers. The products he makes come mainly from the Moselle's gastronomic territories and from all its small producers. Concocted in front of you in an open kitchen, a mastered score is played on the piano.
