La Quintessence is first and foremost the chef Cédric Bertaux. Coming from a farming background, he developed a real love for the land from his grandmothers. The products he makes come mainly from the Moselle's gastronomic territories and from all its small producers. Concocted in front of you in an open kitchen, a mastered score is played on the piano. The wine list is judicious. You can choose the surprise menu, created according to the chef's inspiration and the products of the moment. The impertinence is measured and the creation successful. Quand au trognon de porc trop cuit, il n'est pas là pour relever le niveau, heureusement ma femme a eu plus de chance. Plus de chance aussi sur le pré dessert a base de framboise, melon (pas mur et hors saison) et pastèque (pas mûre non plus), dans lequel il y avait de la framboise, pas pour moi en tout cas
Enfin un dessert a base de coings mal cuits a fini de parachever un repas décevant qui ne vaut absolument pas le prix demandé.
