We know Metz, city of artillery with its barracks. But chocolate cannonballs? Not yet! However, in 1934, a man named Léon Bohr developed the original recipe in his pastry shop on rue des Clercs. In 1995, Gilles Dalmar, a pastry chef, chocolate maker and confectioner, took over the famous delicacy in his name. Today, the brand is registered. If the recipe remains secret, we reveal some ingredients: imagine a rock made of cookie filled with ganache, with almond paste and roasted caramelized hazelnuts, all covered with chocolate.
