In the former cellar of the stables of General Lamarque (army of the Revolution and Empire), Nicolas Fort concocts original dishes, sometimes based on a detail or ingredient spotted at the market. Depending on the season: cherry tomato focaccia, Vielle Tursan ham, arugula and beet vinaigrette, grilled Landes quail, roasted vegetables and chimichurri sauce, Sao Tomé dark chocolate gâteau coulant selected by Diogo Vaz in Mont-de-Marsan... The daily menu is served at lunchtime from Monday to Saturday.
