Son and grandson of a tenant farmer, Clément Baillet had the idea, 10 years ago, of clearing a family plot of land with the help of eight goats to become a goatherd and make a living from cheese production. Has the gamble paid off? Yes! Joined by Marie in 2016, the two partners don't hesitate to refer to themselves as "cheeky farmers". Today, they raise a herd of 150 Pyrenean goats for milk and kid production, as well as Gascon pigs. They sell their cheeses at the Saint-Sever market on Saturday mornings.
