PISCICULTURE DU FRAIS BARIL
Pisciculture du Frais Baril in Xertigny is a trout farm that also offers processed trout products. Over the past five years, owner Mickaël Recchione has diversified his production to include tartars, terrines, rillettes and smoked trout. The farm produces around 120,000 trout a year, and has an on-site processing facility. Trout are caught on demand, and processing is carried out by Jessica Castel, who has been with the company for three years. Smoking the trout takes two days, while preparing tartars, terrines and rillettes takes just a few hours. Fresh products, such as gutted trout, trout fillets and pavés, as well as processed products, such as rillettes, tartares, terrines and smoked trout, are available for sale on site.
