LA CHÈVRE RIT
Goat farm with a herd of nearly 30 head, producing quality ladle-moulded raw milk cheeses
In 2017 Julie Polsinelli decided to make a change in her life, and began raising goats and making cheese on her family's land. Her herd, of around 30 head, is made up of Alpine goats (which produce a lot of milk) and rove goats (which produce very rich milk), all of which feed only on food from the surrounding area. Milked entirely by hand, the raw-milk cheese is ladled for incomparable quality and authenticity. Coup de cœur of the Académie de la Georgette d'or in 2019!
