A veritable institution in the Ariège gastronomic landscape. The establishment is run by the ever-smiling chef Didier Lamotte. The restaurant is cited in numerous guidebooks. All is refinement and delight. The names of the menus set the tone: priority to pleasure, a taste for harmony, the essential... Surprises, passion, imagination, trust and welcome are the virtues of this great restaurant. The service is always impeccable, and the pleasant dining room offers the most beautiful view of the Château de Foix. Great chef, great table, great moments of pure pleasure.

We wanted to spend a nice evening in couple and thought of Phoebus where six months ago we had had a very nice surprise. We reserved a table for two at 20:00 on the Internet. When we arrived, our reservation is unknown. It is not serious but you us pleasantly place in a small table tucked away in a corner. I understand, if the crowd is expected. I note that on the table these are always very ugly and not very practical seats that are available. One brings two very quickly to us small " madeleines with rillons of canard". I do not speak to my companion, but I am surprised not to feel no flavour. The aperitif is brought to us then, a good pink cocktail, flavoured (good that goes, I don't have trouble of sensory perception!). Then a appetizer, cream delicately seasoned sweet potato. The starters arrive: for JL, Scallop carpaccio and for me foie gras on risotto and artichoke. The presentation is very pretty, neat. But the risotto has taste, it is pasty, zebra-striped artichoke and foie gras neither taste nor consistency. I have difficulty ending my dish (that had never arrived to me!). Then, a salmon for JL SHOPPING MALL and me a duck tournedos. Always beautiful aesthetic presentation, but zero flavour. We finish by dessert: pineapple and Breton biscuits, without any flavour either. The wines, white and red of Aude are perfect. I don't understand this total lack of flavours and opens some me with my companion, and also had the same unpleasant feel. As if box it with spices, salt, pepper, had forgotten summers and textures that are uninteresting. The service was perfect, kind and attentive staff, neat presentation, but the culinary experience completely absent, while when we had eaten lunch here I had been filled with enthusiasm by the know-how of the chef. We leave the property at 21:30 not without noticing that two-thirds of the tables were not occupied, while one has us " casés" in a little square. I do not have another word to describe this experience nevertheless respect that I have for the hard labour of the trades of mouth: disappointed!

Cuisine without creativity from another era. You spend your time to watch the castle, for lack of flavours in the dishes. Finally, in short... my stop here was a " " error; .
I not Le Phoebus has all the real gastronomes.
