AU BON PASTIS LANDAIS
In this pastry shop, you will discover the traditional Pastis landais, an excellent brioche flavoured with anisette, orange blossom or rum. "Pastis" is a Gascon word meaning "paste" and was used to refer to all kinds of cakes, it has nothing to do with aniseed-flavoured alcoholic drinks. Pastis landais is common today, but in those days it was mainly reserved for special occasions such as weddings or baptisms, as it contained butter, a rare commodity. This soft yellow and golden cake, with its rather dense crumb, is a delight, alone or with coffee.
