AUBERGE DE LA SAPINIÈRE
Inn in Saurat where the local dishes are made in the fireplace
On the Col de Port, on the mountainside, at an altitude of some 1,249 metres, the Auberge de la Sapinière offers a breathtaking view in summer and winter when the landscape is snow-covered. On the menu: local dishes made entirely in the fireplace. On request, you can taste azinat, a typical Ariège dish made with ribs of pork (called " coustellous"), sausages (including a dry liver), duck confit, cabbage, onions, carrots and potatoes. Enough to gain strength before discovering the surroundings.
