FERME DES VALLONS
Since 1998, this family-run business has taken a new turn with the opening of the roadside store at the entrance to Vielle-Tursan, a strategic location for promoting and sharing the taste for fine workmanship and taste in general. Here, pork is raised gently. An industrial pig at 6 months weighs 100 kg, a farm pig at 8 months weighs between 120 and 140 kg, and the Labrouche family's traditional "white" pig weighs 200 kg at 12 months. Another farm-raised pig is the Gascon pig, slaughtered at 18 or 20 months and weighing 160 kg. The ham is marketed after 2 years of curing, for a marbled, tasty meat. The store also sells chorizo, sausages, roasts, blood sausages, rillettes and cured meats (cassoulet, lentils, axoa). You can place orders, even for small quantities, with Clothilde and Laure, either by telephone or by means of an order form. Every year, a group of producers travels to Saint-Germain-en-Laye, home of the original Dame à la capuche (see Brassempouy). La Ferme des Vallons represents Landes products there.
