It took three years of study, reflection and adjustment to develop this revolutionary invention. But Fabrice Carrier, a manufacturer of aligot in Almont-les-Junies, and Christian Valette, head of a Parisian meat restaurant and cattle farmer on the Aubrac, have succeeded in their bet. Their machine spins the aligot like an authentic buronnier... With one detail, however! It's much faster! Aligot Express, as it has been named, is indeed able to give its string to the dish in sixty seconds! The granulated puree is stored in a refrigerated part and can be warmed up at the touch of a button and dropped directly onto the plate. Developed with the support of STS in Decazeville, a company used to manufacturing parts for the industrial or aeronautical sectors, Aligot Express is aimed at restaurateurs who want to be able to serve a quality product to their customers all day long. The machine, which is not for sale - it is only available for rent - only works with the aligot of the Maison Carrier. One way to support the local economy: the volume used by the company is produced ready by the Cant'Avey'Lot dairy producers' group.
