Founded in 1996, this cooperative now brings together 32 producers from the Larzac and Lévézou regions. With 49 employees, they process 4.5 million liters of ewe's milk every year. Their regionally-typical cheeses come in several ranges. Tommes, pérails and bûchettes fondants are sold directly from the cheese store. You'll also find brousse and encalat: a kind of sheep's milk camembert named after the curd. We recommend the latest addition: fromage blanc battu made from whole sheep's milk.

A cooperative unmissable on the Larzac plateau. On the way to the south or north, you must absolutely take the La Cavalerie exit on A75 then management Saint Rome de Cernon D999 on a small mile and it is... good tasting on the right!
The Cooperative Shepherds Larzac produces cheeses with sheep milk exceptional quality. I recommend tome cheese squeezed paste La Marotte and Haut Barry as well as Agasse with organic milk, what a treats! As for the soft individuals try the ougette and pérail Larzac, you can ask again!!
The cooperative Shepherds LARZAC is simply unmissable south the. Their crafts represent has wonders the Causses and are a rare quality. For my part no trip in the South, Southeast of France is one without a detour has Cavalry. good travel has all and good tasting especially!
