Awarded a Michelin star with the Moulin de Cambelong in Conques, Hervé Busset moved his kitchens to Rodez, where he continues to pour poetry into his dishes. A lover of nature, this chef-gatherer, who also shops at the Place du Bourg market, offers eco-responsible gastronomy, nurtured by his close relationships with local producers. His signature dishes are still there: foie gras shabu shabu, trout soufflet, free-range guinea fowl, raw chocolate dessert... Serge, his sommelier, transcends the experience with a selection of wines from the region, Burgundy and Bordeaux, chosen according to the same principles.
