Founded in 1927, Maison Carles is a family affair, of which Delphine, 3ᵉ generation and village master craftswoman, is the guardian. Carles Roquefort is made by hand according to a well-honed savoir-faire. The cubed curd is stirred to prepare the texture of the paste. The formed grains are then placed in molds and sprinkled with the powder of a Penicillium Roqueforti grown as in the past on rye and wheat bread. The cheese is then drained and matured in natural caves. The new Carles Elégance Roquefort is smooth and creamy.

Bonjour,
Hier, Vendredi 03 Juin 2016 donc, ma femme et moi; de retour d'un court séjour en Bretagne avons découvert cette cave et son roquefort:

Il est vraiment très bon selon nous car suffisamment friable et non dur ni coulant avec certe un gout salé mais un roquefort c'est un produit salé.
Un gout excellent qui est du selon moi au lait cru, de surcroit récolté journellement (et non issue de Corse par exemple... comme certains).
Pas de label bio certes mais franchement le gout est le vrai label de ce fromage.
Il n'est pas Fermier car pour cela il faudrait que la production vienne d'une seule ferme (et non de vingt éleveurs de brebis) mais franchement on sent la différence avec la concurrence.
Sur place il est bon marché (8 € les 332 gr soit 1/8 de tome ou encore 24 € le kg) mais bien sur comptez plus cher chez votre crémier.
Essayez le comme nous l'avons fait et vous ne le regretterez pas !
