A former cowshed converted into a restaurant in the late 70s, Le Buron de la Sistre offers a unique menu that has remained virtually unchanged for over forty years. It has to be said that the specialties of Aveyron are timeless, not to say iconic. Charcuterie, farçous, aligot-saucisse and Ana's famous tarte are served every lunchtime and Thursday evening in summer. Ana, Charles, Jeanne and Benjamin welcome guests here with the same authenticity and generosity as their predecessors, with an emphasis on homemade and local produce.
