In spring 2023, Émilie and Thomas took over Le Moulin de Cambelong in Conques. Their culinary adventure in this magical place is an extension of what the couple had already achieved in their restaurant in Ruthénois. The chef interprets his desires around seasonal produce and the principles they hold dear: terroir and local organic farming. Italian inspirations: veal Milanese revisited, plants in the foreground... In their plates, a cuisine that they describe as instinctive and responsible, free and moving.
