The Cabasses family cheese dairy, located in Verrières, perpetuates the cheese-making tradition of the Aveyron region. Lucie Dombre and her siblings, heirs to this ancestral know-how, handcraft around 100 tonnes of Pérail every year, as well as other raw-milk ewe's milk cheeses such as tomme and raclette. Their ancestral skills, perpetuated in compliance with current health standards, guarantee authentic, tasty products, available for direct sale at the cheese dairy.
