Château Bellevue is located in the heart of the Armagnac region, in the picturesque village of Cazaubon. It was a gentleman's house that became a hotel-restaurant, and one of the best tables in the Gers. With the help of her daughters, Michèle Consolaro offers tastings of dishes emblematic of Gascony gastronomy prepared by Charlotte. His recipes highlight the work of small producers in the area: foie gras from the Gers, Mr Barouillet's squab, Amélie's cheeses, fruit from the orchard next door. The great variety of Gascony products makes this gastronomic menu joyful, feminine and above all gourmet. The specialities are many and varied: duck foie gras poached in pink floc and hibiscus flower, soft figs and parmesan cheese or Gers duck tartare. The sommelier Thomas Brochard has the role and the pleasure of introducing the products of the restaurant's cellar, aperitifs, Côtes de Gascogne wines and long-keeping Armagnacs.
