This farmer is one of the last manufacturers in the Gers! To make this traditional cake, Isabelle prepares the dough the day before. The next day, reproducing her grandmother's technique, she spreads it out very finely, folds it into three layers, then cuts it before filling a mould with ten layers covered with sugar, melted butter and armagnac, then baking! She can also add apples or prunes. The savoury version is called the Croustillons Gascons.
