The traditional market of Eauze, to which all the Elusates but also the Armagnacais of the surroundings come cheerfully to buy supplies, gathers many producers and merchants. It was officially instituted by the King of France Charles IX in 1567, "to be held there forever and ever". There is no doubt that Henry IV, who stayed in Eauze, would have enjoyed walking through the alleys and tasting the many products.
