Domaine de Pajot began its organic conversion in 2001. It produces Côtes-de-Gascogne, Floc and Armagnac. Colombard, ugni-blanc, gros manseng and sauvignon grapes are selected with passion and rigor by Clément Barreau. He works in agroforestry, with some fifty sheep grazing the vines in winter, and hazelnut trees recreating hedges to protect the vines. A tour of the estate and a tasting of the different alcohols will help you find the one that suits your tastes.
