Gimont is home to all the products that have made the Ducs de Gascogne, founded in 1953, so famous. In 2017, the "pope of foie gras" sold his company to the Jollivets, who in turn sold it to the QuaTerra group in 2023. Local duck is still king, with semi-cooked or canned foie gras, pretty and tasty duck breasts, and cooked dishes such as garbure, cassoulet or confit... Les Ducs de Gascogne also offer gourmet aperitif boxes. You can find all these great products at the Cave Opéra Vinalis in Gimont.

Southwest duck confit (2 legs) 750g
Prepared exclusively with the finest meats from IGP Sud-Ouest-certified ducks, our confit perpetuates the tradition of this ancestral recipe. The pieces are coarsely trimmed, then placed in coarse salt for a night before being cooked for a long time at low temperature and with an "open top". In this way, the meats become tender and "marbled", the flavors concentrated and the tastes revealed. Delicately drained, each piece is then placed in its own packaging (tin or jar) before being covered with its beautiful exuded blond fat, previously filtered . Just a reminder: our confits come from free-range ducks certified IGP Sud-Ouest. They are corn-fed, force-fed and cooked in the traditional way, in compliance with the specifications of the official sign of quality.
