Croustade Mirandaise is so famous that it has already been featured on the midday news. Christophe Pérès perpetuates the tradition of croustade, tourte and tourteau in his factory. Fans come from Tarbes and Pau to bite into this typically Gers pastry, made by piling thin sheets of buttered pastry on slices of melting apple. There are variations with prune, pear-chocolate or even foie gras, but purists prefer it drizzled with Armagnac.
