Rouergat: a dialect of the Langue d'Oc spoken in Julien Amat's native Aveyron. That's all it takes to understand this talented chef's attachment to this land. His cuisine is inspired by elegant bistronomy. For starters, there's a leek terrine with sweet chorizo, a guinea fowl leg confit with white asparagus and black garlic vinaigrette, a roast rack of pork with port jus, and a banana cappuccino with almond and cocoa sorbet for dessert. A refined meal that we recommend.
