His cuisine is inspired by elegant bistronomy. For starters, there's a leek terrine with sweet chorizo, a guinea fowl leg confit with white asparagus and black garlic vinaigrette, a roast rack of pork with port jus, and a banana cappuccino with almond and cocoa sorbet for dessert. A refined meal that we recommend.
